Gluten-Free Crumble Cake Recipe

Last weekend I made 6 sandwiches using Udi’s gluten-free whole grain bread for a picnic with friends. One of my friends mid-meal asked “CC, how are you eating this?!” When I explained the bread was gluten-free, she was shocked! Although there are a ton of great gluten-free options out there, sometimes I find myself craving something from back in my gluten-eating days that I just can’t satisfy with gluten-free alternatives. What do you do when you crave something that doesn’t have a gluten-free equivalent?

 You make it happen!

Before going gluten-free one of my favorite pastries was the Crumble Cake at Starbucks. I haven’t seen any pre-made products out there that even come close to this glorious baked delicacy. Last weekend I decided to try and make it and to my surprise, it turned out to be a totally satisfying gluten-free replica!

This is one of our very favorite desserts. It meets all the criteria we look for in making a dessert. It is generally loved by young and old alike.  It doesn’t require baking, there are no gluten free flour ratios to balance out, no added sugar,  free of lengthy preparation and complicated steps, and most importantly so delicious. In our globally connected world, you can now find strawberries almost year round. We generally prefer to eat foods as they are available seasonally, and locally grown if at all possible. So Delicious Dairy Free Coco WhipBack in the day it was impossible to keep a tub of Cool Whip in the house because it was irresistible to me plain (on the end of my finger) or on top of pudding, cake, pie, and ice cream. Gluten Free Pizzelle Recipe

One thing that I have really enjoyed this past summer is making breakfast parfaits.

I do not know what it is, but they are just light on the system and they kinda trip the body into thinking that it's getting a sugary treat so you don't crave sugar all day (YAY!)

This parfait is sweet, HEALTHY, and satisfying!

Do you know what a brookie is? I didn't before I received a recipe from McCormick. A brookie is a combination of brownie batter and cookie dough, which creates a half chocolate chip and half brownie cookie, or the best of both worlds. I don't usually post recipes, but when I find one that 'speaks' to me like this one, then I feel compelled to share it.

First I would like to apologize for being MIA the last month or so. A lot has been going on with the move, no working stove, and no internet for a while…but all is fixed. I am working on getting settled (still), and trying to organize life before school begins. Now on to the good stuff…

37 Cooks is at it again with another challenge. This challenge is with a company that I happen to love very much, Tropical Traditions. I love their coconut flour and oil very much and use it often, but sadly not often enough. I am working on trying to incorporate more of these great products into my CCGF recipes. Tropical Traditions products are all organic and Non-GMO! When I was first diagnosed with celiac disease the first thing I thought about missing was chocolate chip cookies. My grammy made the most incredible chocolate chip cookies and the thought of not being able to eat them made me sad, so I began my quest to make gluten-free chocolate chip cookies just like grammy's, and I didn't stop until I succeeded.
