One thing that I have really enjoyed this past summer is making breakfast parfaits.

I do not know what it is, but they are just light on the system and they kinda trip the body into thinking that it's getting a sugary treat so you don't crave sugar all day (YAY!)

This parfait is sweet, HEALTHY, and satisfying!

Recipe: Gluten-free Brookies from McCormick

Do you know what a brookie is? I didn't before I received a recipe from McCormick. A brookie is a combination of brownie batter and cookie dough, which creates a half chocolate chip and half brownie cookie, or the best of both worlds. I don't usually post recipes, but when I find one that 'speaks' to me like this one, then I feel compelled to share it.

First I would like to apologize for being MIA the last month or so. A lot has been going on with the move, no working stove, and no internet for a while…but all is fixed. I am working on getting settled (still), and trying to organize life before school begins. Now on to the good stuff…

37 Cooks is at it again with another challenge. This challenge is with a company that I happen to love very much, Tropical Traditions. I love their coconut flour and oil very much and use it often, but sadly not often enough. I am working on trying to incorporate more of these great products into my CCGF recipes. Tropical Traditions products are all organic and Non-GMO! When I was first diagnosed with celiac disease the first thing I thought about missing was chocolate chip cookies. My grammy made the most incredible chocolate chip cookies and the thought of not being able to eat them made me sad, so I began my quest to make gluten-free chocolate chip cookies just like grammy's, and I didn't stop until I succeeded. Everyone has different reasons for making food (like Nutella) at home which they can buy off of the shelf; it might be economic or for health reasons. Since the first time I tried Nutella, I never had the desire to make it. But, when the day came that my darling dairy-free daughter could no longer partake because of the milk in it, I considered it.

I had seen a recipe for the hazelnut spread in my high-powered blender but assumed it was hard. I decided one day to take a look and was very happy to find that 1. it was not that hard (1 hour start to finish with time in between when you don't have to do anything), 2. I had most of the ingredients in my cabinet with the exception of the hazelnuts (aka filberts), and 3. the recipe did not have any dairy in it. Ok, time to shift the paradigm again. (more…)

Moist and luscious, gluten-free carrot cake with cream cheese frosting is a gluten-free favorite at my house. The cake freezes well and the recipe makes one round layer cake, one 13x9-inch sheet cake or 36 cupcakes. Three cups of grated carrots add healthy carotene, a nutrient that the body uses to make vitamin A. Not bad for a cake! (more…)
