Thanksgiving Leftover Turkey Sandwich (c) 2011 Kimberly Bouldin

With the Thanksgiving holiday quickly approaching,I have been itching to find ways to eat the leftover turkey. I know this may seem odd,as there is no leftover turkey yet,but I am anticipating leftovers,as we have never not had them. I wanted to get creative this year and mix things up. Yeah, turkey soup and mashed potato bowls are great, but I wanted to create a unique turkey sandwich. I didn’t want anything complicated, just a different way to enjoy the (more…)

Gluten Free Wish List Revisited

November 3rd, 2011 by Jennifer Harris

Gluten Free Works Jennifer Harris

gluten free toaster pastryEarlier this year this Examiner put together a wish list of gluten-free products we would like to see hit grocery store shelves. Some of the items have been developed and will come out at the end of this year, or early next year.  There are also some items this Examiner didn’t have on her list that have been introduced and some items we are still waiting on.

It seems only appropriate as we are drawing to the end of 2011 to recap some of the first-to-market gluten-free products that have hit or are about to hit store shelves this year.

Here are some of my wish list products that are set to hit store shelves: (more…)

Gluten-Free Round Up…Seasonal Pumpkin Recipes

gluten-free-pumpkin-recipesFall is here and that means pumpkins are starting to appear on your neighbor’s door step and in grocery stores, which is the universal signal to start carving and cooking pumpkin. Why is it most of us tend to cook with pumpkin only around Halloween and Thanksgiving?  Pumpkin is loaded with vitamin A, fiber and it is low in calories, so we should find ways to work it into our diet throughout the year.

Pumpkin is very versatile to cook with, so it can be used in both sweet and savory recipes.  This Examiner did a little research for gluten-free pumpkin recipes and was amazed at all of the drool-worthy recipes we found.  Listed below are just a fraction of the gluten-free pumpkin recipes available online.

What is your favorite way to cook with pumpkin?

My Family’s Favorite Gluten Free Eats: Seafood

October 12th, 2011 by Cinde Shields

gluten free seafood
Since I am frequently asked what gluten free foods my family eats I decided to start an article series called My Family’s Favorite Gluten Free Eats.

When people first discover that my family is gluten free they automatically assume we have a difficult time finding things to eat. While it is true that gluten free convenience foods are not always readily available (or palatable for that matter), there are always an abundance of naturally gluten free whole foods to choose from at every market.
In my family the most commonly eaten main dishes revolve around seafood, largely in part to the fact that two of my family members are pescetarians.  Some of our friends and family seemed surprised to hear that (more…)

I always have such good intentions when it comes to food. I often go to bed after reading a cookbook and dream about the amazingly healthy and delicious food that I will make the next day. “Tomorrow will be different,” I tell myself. “Tomorrow I will cook a healthy lunch for myself, do some baking and
perhaps even change out of my PJ’s before lunch.”

But more often than not, this ideal day never happens.
However, today was different. There weren’t (more…)

Grilled Swordfish and Mango Salsa Recipe

gluten-free swordfish mango recipeFish is one of my favorite things to eat, but sadly I don’t cook it enough. We eat a lot of sushi in our house because Bryan isn’t a huge fan of fish when it is cooked, except for swordfish.  He’s eaten a few cooked fish dishes that I’ve made but like I said, I don’t cook it often enough.

A few months ago we went to a local restaurant because he was craving swordfish.  He had his grilled with a bruschetta topping to it while I had a delicious piece of mahi-mahi with a mango salsa on top. He was a bit jealous of my salsa and wasn’t such a fan of the bruschetta. I promised him the next time it is on sale we would pick up a piece and I would cook it however he wished.  He asked for it to be grilled with a mango salsa, similar to the one I had on my mahi-mahi.

Lucky for him, swordfish was on sale this week! So keeping true to my promise we (more…)

I LOVE the San-J orange sauce.  I really love the San-J orange sauce when I add a hint of sriracha chili sauce to it.  My daughter does not like chicken but she devours this dish.  It is the perfect combination of sweet, spicy and salty.  And, of course, it is super easy to make. (more…)

Gluten free pesto pizzaThis is the other pizza that my husband made for our dinner tonight.  This is my personal favorite.  There is something very comforting about the italian sausage and roasted veggies.  The other pizza he made was a Spinach, Pancetta and Goat Cheese Pizza.  We use Udi’s frozen GF pizza crust, but any GF crust will work.

Ingredients:

3 mild Italian sausage links,  casing removed
1 1/2 cups fire roasted peppers and onions (I use the frozen Trader Joe’s version)* (more…)
