It has finally happened...the gluten-free answer to the vanilla wafer has been discovered and it is the vanilla cookies made by Gefen.  Now for the bad news...they are only available during Passover and they are made in Israel.

Gefen Gluten Free Vanilla CookiesWhile strolling the aisles at a local Super Target we discovered Gefen's vanilla cookies on clearance for $3.90 per box. What really caught my attention was the Celiac Disease Foundation logo on the box.  The cookies are made from: potato starch, sugar, whole eggs, palm oil and vanilla.  Somehow we just knew they were going to taste amazing and they do.

These cookies remind me of a vanilla wafer crossed with (more…)

Christmas Gluten-free Lemon Almond Cookie Recipe

December 14th, 2010 by Amy Fothergill

I tend to over think blogging so my intent is to be short and sweet (good luck to me). Many years ago, I had a recipe for Lemon Almond Cookies. I had copied it from a magazine (specifically from Gourmet, Feb 1990) and kept it all of these years. It is hand written on a recipe card; I added my own interpretation and instructions. At Christmas, I always made these delicious, sweet and crisp cookies.

I'm not sure of the last time I made them but in recent years, with a gluten-free diet, I haven't even attempted them. This year, I just couldn't take it and decided to (more…)

Looking at all of those tasty offerings is enough to bring a tear to any gluten free eye because they are off limits. Well, wipe that tear away! Here is a solution to the I-can’t-order-these-cookies-because-they’re-full-of-gluten blues.

The recipe for these peanut butter sandwich cookies comes to us from Florida, from Elizabeth Signer (A.K.A The Fat Boxer) to be exact. The recipe comes with many assurances that these cookies are so much better than the ones you can buy that you won’t be missing anything. (more…)

Chocolate_Chunk_Cookies_lizschauThese chocolate chunk cookies are so simple to make and decidedly less involved than many gluten-free baking recipes. They bake up thin, crispy, and perfectly chewy. These cookies contain no flour or starches, which means they are lower in carbohydrates and, since they are made with cashew butter, are loaded with protein. And, should you choose to use dark chocolate, they're also dairy-free. As always, be vigilant and check labels -- especially when purchasing chocolate, as some contain wheat and gluten.
