Creamy Tarragon Chicken Recipe

When you are looking for an elegant dish that you can serve to both adults and kids, try this one. The recipe is courtesy of Aida Mollenkamp from her book “Keys to the Kitchen” (see the interview and blog post here).  I made it for Christmas Dinner this past holiday and everyone raved.

Now, if you notice, the recipe is far from dairy-free so it was off-limits for my daughter (however, there are dairy substitutes below). I didn’t really think it was going to be her thing, so after sauteing the chicken, I put some aside for her and proceeded with the recipe. If you know me, I’m not one to make two meals but I do accommodate her special diet by being just a little creative. I promise, it’s possible.

After reviewing Aida’s book, this one really stuck out. However, being The Family Chef, I had to put my own spin on it and make it a bit more family friendly. It’s naturally gluten-free and absolutely delicious. If you need some of your own keys in the kitchen, check out Aida’s book.

I saw an advertisement on TV for Hellmann’s Mayonnaise with this recipe. Whilst it sounded, let’s say interesting, I was intrigued and had to try it.

The first time I tried this recipe I bought some gluten free rice crumbs but I found them too crunchy with an almost sand type texture. The next time I cooked this recipe I therefore made my own breadcrumbs by blending a piece of frozen gluten free bread. It turned out really well, the chicken was very tender and it tasted awesome served with cornmeal mash (cornmeal mixed with milk and cheese) and stir fried vegetables.

Gluten-free, dairy-free grilled chicken recipeLast week, a joyous thing happened to me at the grocery store.  I saw a display of So Delicious Coconut Kefir, by Turtle Mountain.  I have been eating the So Delicious Coconut Milk Ice Creams and Yogurts but I was dreaming of an agave sweetened coconut milk kefir, and the folks at So Delicious must have read my mind.

Many of us on a gluten-free diet also avoid dairy.  The world of coconut milk products can make our dairy-free lives much more pleasurable.  I was so excited to see the kefir in the store that I bought both the strawberry and the dairy, both delicious!

I LOVE the San-J orange sauce.  I really love the San-J orange sauce when I add a hint of sriracha chili sauce to it.  My daughter does not like chicken but she devours this dish.  It is the perfect combination of sweet, spicy and salty.  And, of course, it is super easy to make. (more…)
