Gluten Free Burrito Casserole Recipe

When you’re craving a burrito, is it really that gluten-containing tortilla  you’re after?  My guess is that it’s actually the hearty combination of fillings–the rice, beans, cheese, meat, etc. that got your mouth watering in the first place. Sure you could always make or buy gluten-free tortillas, but why not take a twist on the classic and ditch the burrito shell all together?

This recipe comes straight from my cookbook, The Warm Kitchen. This recipe is versatile, family-friendly and cooks up in about 20 minutes. Dinner is served!

 

Gluten-Free Burrito Casserole

Serves 4-6

Make sure your saute pan is hot first then add the ground meat to get the meat nice and brown

When my husband and I lived in California, there was a place that we really loved to dine at named Dharma's.

Yes, it lived up to the name...

Cooky owner, rockstar looking workers, New Age decor...

Yet it was a wonderful place to eat out at. In fact, if you were in my town, it was an absolute must - everyone knew that.

This restaurant, beautifully was full of all sorts of healthy, organic, vegan, and gluten free clean eats. It was known for its colossal sized breakfast, lunch, and dinner options to try that crossed all cultural bounds - Indian cuisine, Asian, Mexican, Italian, American - you name it.

One thing that can be missed on a gluten free (gf) diet is a burrito.

One idea is to leave the tortilla out of the picture entirely and just focus on the filling.

This "deconstructed" burrito casserole is healthy, family-friendly, and versatile. Once the rice and meat are cooked, it only takes minutes to assemble and about 20 minutes to heat. Dinner is served! (more…)
