With the Thanksgiving holiday quickly approaching,I have been itching to find ways to eat the leftover turkey. I know this may seem odd,as there is no leftover turkey yet,but I am anticipating leftovers,as we have never not had them. I wanted to get creative this year and mix things up. We discovered during the past year that my 4-year-old son Ronin and my 21-month-old daughter Ellie are both gluten and dairy intolerant. My husband John is gluten-free too. The good news is that changing Ronin’s diet has helped his anxiety-related sleep issues decrease immensely. He used to have night terrors every night, but now only has them on the rare occasions we miss cutting out the gluten.
Since John has been gluten free for a while, I came up with this stuffing recipe a few years ago for Thanksgiving. And its always been a huge hit. This year I’ve modified it to also remove the dairy for the kiddos.

Thing is – you can’t really give a cake stand to someone without having treats on it, especially if they know that you love to bake.
So I tried to figure out what seasonal recipe I could make for the stands that I could prepare ahead of time, freeze, would appeal to everyone I know (gluten-free, vegan, egg allergies, potato allergies etc), and will stay on the stand with little concern of things breaking.

Everyone loves Chex-style snack mixes. Our holiday blend is a twist on the original recipe. Poultry seasoning, dried cranberries and crisp gluten-free crackers add just the right holiday flavor in this fast and easy gluten-free snack mix recipe.
Prep Time: 15 minutes
Cook Time: 1 hour
Total Time: 1 hour, 15 minutes
Yield: About 12 cups snack mix

Now that there are Gluten Free Rice Krispies available at the main stream grocery store, my family will be making these classic treats for many occasions. The kids LOVE helping to make these sweet treats and they couldn’t be any easier. 4 ingredients and you are done.
5 Tablespoons butter or non-dairy butter (we use Earth Balance Buttery Sticks)
1 bag of 40 marshmallows
7 cups of Gluten Free Rice Krispies by Kelloggs
Icing or Frosting for decorating
In a large pot melt the butter over medium heat. Add the marshmallows and stir until melted.
Slowly add the cereal and stir until combined. Transfer to a spray-oiled 9×13 pan. Press into the pan. Allow to cool and then cut into pieces. Decorate if desired.
