Sunflower Seed and Kale Pesto

Sunflower Seed and Kale Pesto

I ate a lot this weekend. Way too much actually…in a good way.

For my Dad’s birthday dinner, my mom and I made Ina Garten’s God-sent Truffled Macaroni & Cheese. Despite the loan she had to take out to buy the truffle butter and exotic mushrooms, it was by far the best mac n’ cheese ever.

Let’s just say, it’s going to be rough getting used to plain ‘ol mac n’ cheese after that eye opening experience.

Now, I’m not advocating going into debt over truffle butter, but if anything is worth over spending, this recipe is it.

We also had some extremely gourmet rib eye. Coated with McCormicks grill seasoning, seared on the charcoal barbeque, and finished off with (more…)

I have this strange habit.  I sign up for a challenge, accomplish it, and then stop. Cold turkey.

On Memorial Day weekend, I ran a marathon.  A FULL marathon.  My FIRST marathon.  That was FOUR months ago.  I haven’t run outside since crossing that finish line…well, except to see who just fell off the monkey bars at recess.  Three years ago, I finished anOlympic length triathlon.  I swam, I biked, I ran.  But after finishing that event, the bike sat in the garage, and I don’t think I’ve entered a (more…)

Fall is here! My favorite time of year. At school we have a Starbucks on each campus I see everyone enjoying the pumpkin muffins, pumpkin coffees etc. and it drives me crazy that I can just run in and grab one of those delicious looking muffins with the cream cheese on them… (more…)

Gluten-Free Parmesan Crusted Chicken Recipe

September 20th, 2012 by Petra Aitken

I saw an advertisement on TV for Hellmann’s Mayonnaise with this recipe. Whilst it sounded, let’s say interesting, I was intrigued and had to try it.

The first time I tried this recipe I bought some gluten free rice crumbs but I found them too crunchy with an almost sand type texture. The next time I cooked this recipe I therefore made my own breadcrumbs by blending a piece of frozen gluten free bread. It turned out really well, the chicken was very tender and it tasted awesome served with cornmeal mash (cornmeal mixed with milk and cheese) and stir fried vegetables.

Gluten-Free Mini Caprese Frittatas Recipe

September 18th, 2012 by Chrissy and Lauren

As we’ve discussed, everything is better in mini form.

Except portions of gourmet mac n cheese. Always take the big dish of that stuff. It’s not everyday that you will come across a heaping portion of creamy, cheesy, black truffle-y, mac n cheese.

Turnip and Potato Hash Browns

Turnips–definitely not a vegetable I grew up munching on. They are never featured on veggie platters, and definitely do not have shelf space at my local Trader Joe’s. I would be so curious to know if anybody ate turnips, on the regular!?

When Jacque brought me a bag full of fresh dill from her garden, she also threw in some turnips.... (more…)

With a season-change on its way, I'm reminded of one of the best things about fall...pumpkin! People will try anything to make their favorite desserts, appetizers, snacks and meals with pumpkin during the fall, but with a gluten allergy or Celiac Disease, enjoying pumpkin pies (more…)
