Gluten-free Tiramisu Recipe with Shabtai Lady Fingers

February 22nd, 2010 by Anne Steib

Tiramisu has always been one of my favorite indulgences since my first trip to Italy, in the late 80s, and trying the real thing. The key is having the right cream, because without that, it just tastes like something mass produced you would expect to find in a grocery store.

Of course the lady fingers are a main ingredient as well, and being gluten-free, that become a new challenge. Luckily, I had a box of Shabtai Lady Fingers on hand, so I was good to go! I decided to forgo the usual raw egg in the cream, because that just doesn't sound appetizing the more I learn about food. The whipped heavy cream takes the place of the raw eggs in this recipe. I never said it was healthy! (more…)

Gluten Free Chocolate Genoise Cake Recipe

Often times, when baking gluten free items, a small substitution is needed. However, if you don't bake a lot, some recipes can be a bit complex. It's best to follow a good recipe and make sure to make it once before you decide to make it for a big party.

genoise_cakeChocolate genoise cake can be used to make any type of jelly roll cake but it's especially popular around the holidays to make a yule log. Creating a gluten free version requires only a few changes. Always make sure the other ingredients are gluten free like the cocoa. For the best flavor, use a local cocoa powder like Ghirardelli. It gives the cake a great flavor. (more…)

Chocolate_Chunk_Cookies_lizschauThese chocolate chunk cookies are so simple to make and decidedly less involved than many gluten-free baking recipes. They bake up thin, crispy, and perfectly chewy. These cookies contain no flour or starches, which means they are lower in carbohydrates and, since they are made with cashew butter, are loaded with protein. And, should you choose to use dark chocolate, they're also dairy-free. As always, be vigilant and check labels -- especially when purchasing chocolate, as some contain wheat and gluten.
