Gluten-Free Quinoa & Pumpkin Seed Granola Recipe

I have dubbed this my no-oat granola. I missed that detail when I first started adapting this recipe and was sure Better Homes and Gardens had forgotten to list the oats in the ingredient list. Alas, it was intentional and I’m loving it! This granola with a little homemade almond milk is my new go-to breakfast, snack, and occasional dinner.

Let me preface this post by noting that Valentine’s day is not a holiday I, personally, subscribe to. The cards, the flowers, the mush, the grand gestures, and all the things that some expect of this day…none of that is really my jam. So, last year, after I requested no frills or fancy dinners or grand gestures, my boyfriend, Mike, presented me with a terracotta pot with a yellow lily and some dirt in it. (Read: don’t scoff yet…) Upon further inspection, it turned out that the “dirt” was finely crushed chocolate cookie bits covering a blue Solo cup filled with his gluten-free version of cookies and cream ice cream (my absolute favorite) that he had mixed and made himself. This gesture seemed small to some in my life, but to me, the girl who hadn’t had cookies and cream ice cream in almost two years, it was the grandest gesture of them all.

That’s right. Dunkin’ Donuts is the latest nationwide chain to try out gluten-free.

According to its website, Dunkin’ Donuts is the world’s leading baking and coffee chain, serving more than 3 million customers per day. Now Dunkin’ Donuts has determined “it’s time to bake the donuts” gluten-free style.

Dunkin’ Donuts is testing gluten-free muffins and donuts in select stores in the Boston and Miami areas. These include blueberry muffins and cinnamon sugar donuts. The products are certified by the Gluten Free Certification Organization (GFCO). The cinnamon sugar donuts sell for less than (more…)

Tweaking Tradition: Holidays

It is that time of year again! We have shining lights on all the streets, the fire light of Menorahs shimmering through windows and stars twinkling atop 6-foot tall trees.  The winter holidays are by far my favorite despite the accompanied stress they tend to bring.  Personally, I love when the whole family gets together for the holidays. We don’t have any of the often satirized family drama you see on TV and in the movies about family gatherings during the holidays.  The holidays usually bring around a different type of stress for me: how to avoid gluten during all of the holiday dinner parties.  This year, however, this won’t be an issue because my family has figured out how we can tweak our Italian traditions to be totally gluten free.
