Gluten-Free Cauliflower Grilled Cheese Sandwiches

Here is an easy, cheesy, nutritious recipe for you! Cauliflower is great for digestion, with lots of fiber and high in vitamin C.

INGREDIENTS

  • 1 head cauliflower, (to make about 4 cups processed cauliflower). You can also buy the prechopped cauliflower crumbles.
  • 2 eggs, lightly beaten
  • 1/2 c. finely grated Parmesan. Substitute Romano cheese if you want sheep instead of cow.
  • 1/2 tsp. oregano
  • 1 1/2 c. shredded white Cheddar. Substitute Manchego if you want sheep instead of cow. Daiya sells a pea based substitute.

NOTE: Many people have recommended roasting the cauliflower before frying to remove the fluid. Another suggestion is to steam it in a bowl in the microwave under plastic wrap.

Here is an example of cauliflower crumbles. This makes it super easy, since most of the hard work is done for you! Since one bag is 2 cups, you will need 2 bags for the recipe.
