As she visited the support groups and met their members, Cleo noticed that while many people received their diagnosis years ago and followed a gluten-free diet, they were still sick. In virtually every case, the cause could be attributed to one or more nutrient deficiencies.

Restrictive diets can  lead to nutrient deficiencies because people tend to eat the same things and lose the crucial variety necessary for a balanced, nutritious diet.  Although, processed gluten-free, dairy-free products have become more palatable, they frequently lack the nutrients needed for a nutritious diet.

Why Dairy-Free?

While researching, Recognizing Celiac Disease, Cleo discovered up to 50% of those diagnosed with celiac disease are also sensitive to cow dairy. In these cases, dairy can cause a condition called Bovine Beta Casein Enteropathy that damages the intestines exactly like celiac disease.

While presenting at several Autism events, Cleo was dismayed to find many parents who were thought they were giving their children a gluten-free, dairy-free diet were completely unfamiliar with the hidden sources or how to meet their children’s nutritional needs. These parents would swamp her table to present their children, whereupon Cleo would identify nutrient deficiencies and offer guidance as to what to point out to their doctors, which supplements they needed and the types of foods that contained the nutrients they needed.

So many people asked for recipes that Cleo created “Gluten-Free, Dairy-Free Cooking Made Easy” to help them.

More than a cookbook, “Gluten-Free, Dairy-Free Cooking Made Easy” is a health and nutrition guide for those who want to recover their health while enjoying good food.

You see, Cleo graduated from the University of Pennsylvania’s nursing program at a time when nursing education included nutrition and part of her duties were to instruct people about nutrition and diet. Therefore, she wanted her cookbook to include delicious breakfast, lunch dinner, and snack recipes but also provide people with a nutrition guide so they could regain their health, stay well and be happy.

Her goals were to give people wholesome, nutritious and simple meals that taste good and the nutritional information they need to help them thrive.

Food is a huge part of life, but nutrition IS life.

Cleo also wanted to educate people about macro and micro nutrients, deficiencies in the importance of being able to identify deficiencies. After all, celiac disease and beta casein enteropathy are malabsorption syndromes that lead directly to nutrient deficiencies. And the vast majority of the hundreds of symptoms and complications and associated disorders the results from celiac disease stem partially or directly from nutrient deficiencies.
