A mix, is a mix, is a mix, right? Not necessarily and definitely not when taking Non-GMO Verification into consideration. Glutino’s Gluten Free Pantry muffin mix is free of gluten and dairy, it is GMO free, and it is incredibly easy to use.
When I received my free sample in the mail I decided I wanted to do something different. I mean who hasn’t made muffins with fruit and nuts, so I went to Twitter to search for inspiration and it presented itself in the form of Cheesy Sausage Muffins. Muffins made with pork sausage and non-dairy cheese are to be highly recommended and they are very easy to make.
Mix up the batter as instructed on the package. I used coconut milk in place of milk, non-dairy butter in place of butter, and I didn’t include vanilla, as I wanted the muffins to be savory and not sweet. Once all of the ingredients are combined, stir in a cup of cooked and crumbled pork sausage and a cup of shredded cheese. Spoon the batter into muffin cups and bake.
These muffins smell divine while they are cooking and the end result is a fluffy and moist muffin that serves as more of a meal than an accompaniment to a meal. These savory muffins have a touch of salt from both the sausage and the cheese, but they aren’t weighed down by either and the ingredients didn’t fall to the bottom like they can with other mixes.
This muffin mix can also be used to create scones, sweet breads (think pumpkin or banana), and sweet muffins. The next time I use this mix, I will add in finely diced onions and red peppers and maybe even some chilies to make the ultimate cheesy sausage muffins.

Thanks, Jennifer, for your review. I used to eat all the Glutino products until I read that they use genetically modified ingredients. At first, I didn’t think much of that. But, the more I learned about GMOs, and read about people having reactions to GM foods, the more suspect I became. Sure enough, when I traced my consumption of Glutino products with how I felt afterwards, I could see a pattern of reactions (such as headaches, congestion, etc). So, yes, I tried their muffin mix, and liked the smell and taste too. Then, the deeper story emerged, so, I’ve moved to other brands.
