Seasoned gluten-free hash brownsI grew up with small weekday breakfasts and large weekend breakfasts. We ate cereal during the week but on Saturday mornings we'd trek (usually by car, although it was extremely close to our house) to a very small, very local diner called Mama's. Run by an eastern-European family, the diner made such extraordinary breakfasts that we became fast and regular patrons. We are all feeling the effects of rising food costs.

A recently published study appearing in the Journal of Human Nutrition and Dietetics, "Limited availability and higher cost of gluten-free foods," found that gluten-free versions of wheat-based foods cost, on average from 76% to a whopping 518% more. Ouch!

I ate a lot this weekend. Way too much actually…in a good way.

For my Dad’s birthday dinner, my mom and I made Ina Garten’s God-sent Truffled Macaroni & Cheese. Despite the loan she had to take out to buy the truffle butter and exotic mushrooms, it was by far the best mac n’ cheese ever.

Let’s just say, it’s going to be rough getting used to plain ‘ol mac n’ cheese after that eye opening experience.

Now, I’m not advocating going into debt over truffle butter, but if anything is worth over spending, this recipe is it.

We also had some extremely gourmet rib eye. Coated with McCormicks grill seasoning, seared on the charcoal barbeque, and finished off with (more…)

The Food Allergen Labeling and Consumer Protection Act passed in 2004 and it required the FDA to set gluten-free labeling legislation by 2008, but here we are in October 2012 with no finalized gluten-free labeling legislation. There is now an open petition on the White House website asking the Obama administration to finalize gluten-free labeling now.

Whether it's due to a diagnosis of celiac disease or a gluten sensitivity, or simply because they want to get healthy, many of them have noted a weight loss as part of the benefits they've been seeing. Then why is it, that so many doctors and specialists will dismiss a diagnosis of celiac disease in a patient simply because the patient is not underweight?

I Got Glutened and It’s My Own Fault!

no glutenI sit here writing this post from my bed. It’s 9:39pm and I have been in bed since 4:30pm. My tonsils are so big it hurts to swallow and I feel like I have been in a boxing match where I lost, severely.

I used to get sick like this all the time before I was diagnosed with coeliac disease and I am starting this think that my immune system is a wreck again.

Why? Because I have been slack. Many of those out there with coeliac disease will think I am stupid. I am stupid.

If you are new to the gluten-free diet, you are probably just figuring out that it isn’t just food that you need to check the gluten-free status of, but anything that could potentially end up in your mouth.  Some people have a skin condition associated with Celiac Disease called Dermatitis Herpetiformis and those people must avoid skin contact with gluten regardless if the product is going to come in contact with your mouth (digestive system.). I know that most of us adults don’t intentionally eat health & beauty products, but I know that I have ended up with shampoo in my mouth and if your hand lotion contains gluten, that could potentially cause an issue.

I have this strange habit.  I sign up for a challenge, accomplish it, and then stop. Cold turkey.

On Memorial Day weekend, I ran a marathon.  A FULL marathon.  My FIRST marathon.  That was FOUR months ago.  I haven’t run outside since crossing that finish line…well, except to see who just fell off the monkey bars at recess.  Three years ago, I finished anOlympic length triathlon.  I swam, I biked, I ran.  But after finishing that event, the bike sat in the garage, and I don’t think I’ve entered a (more…)
