I have often wondered what percentage of people following the gluten-free diet actually make their own bread.  I tend to use mixes to make sweet breads, but I usually buy my gluten-free bread off the shelf, or from my favorite local gluten-free bakery Pure Knead.

Most of us know that gluten-free bread has come a long way in the last five years, so there are a number of great options to be purchased at local health foods stores that don’t contain artificial ingredients and have the taste and texture of wheat-based bread.

New Gluten-Free Dairy-Free Bread Recipe

Here’s our latest and favorite gluten-free (and dairy-free) bread recipe. This gluten-free bread has a terrific springiness and is neither too dry or too wet. And, it has a wonderful yeasty flavor and calls for simple ingredients that are easy to find.

When followed exactly this recipe is consistently dependable. The batter rises quickly and as the loaf bakes it doesn’t bubble over the sides of the pan. As it cools it doesn’t cave in.

It’s highly recommended that you use a good kitchen scale to weigh ingredients, don’t substitute with other gluten-free ingredients and use an instant read digital thermometer to know when your bread is done. And if you have a good stand mixer that helps too.

Miley Cyrus, the ultra popular nineteen year old singer and actress is the latest celebrity to fall victim to the media for being too healthy and too in-shape. And it’s all because she is gluten-free and casein-free.  Actually, the real reason is because many media “reporters” are vicious and misinformed. Their lack of concern for the truth and focus on sensationalism damages people like Cyrus, the gluten-free community and our society as a whole.

Unique Gluten-free Finds at Expo West 2012 – Part 3 of 4

Continuing with part three of my favorite gluten-free products from Expo West, here are my picks for: cheese, granola and snacks.  There were many contenders in these categories, so I limited my list to the top contenders.  All of these products should start arriving on store shelves over the next couple of months.

Cheese

  • Daiya Foods – launched their wedges in three flavors: jack, cheddar, and jalapeno garlic havarti.  If you are looking for a plant-based ‘cheese’ that is free of dairy and soy then you have come to the right place.  Daiya already makes shredded cheese that is great to bake with, but isn’t meant for eating out of the package.  These wedge cheeses can be sliced and eaten right out of the package. They are much softer than I had anticipated, so I could easily press it down with my finger.  The cheese is creamy and would be great to spread on crackers, or to use as spread on sandwiches.  I really liked the spicy kick of the Havarti, the Cheddar had great flavor, and the Jack was just OK. Anchorage, Alaska: Brandy Wendler is a familiar face in the gluten-free world. Just over a year ago, she captured our hearts when she won her first Mrs. Alaska title. Since then, she has been pursuing her goal to raise awareness for Celiac Disease and gluten intolerances. She has had the opportunity to travel cross-country making appearances and educating about a disease that affects over 3 million Americans. She has also started her own non-profit organization, A Spoonful of Wellness, and designed gluten-free menus for local restaurants in Anchorage. Brandy was diagnosed with Celiac Disease over 4 years ago and says her goal is to “decrease the number of people who have this disease and don’t know it.”
