Holy donations!  Congratulations to Dr. Alessio Fasano and the Center for Celiac Research at the University of Maryland Medical Center on receiving a $45 million private donation from the family of a grateful patient. 

The donation marks the largest single gift ever given to the university system and will be used to expand the University of Maryland Center for Celiac Research and study other autoimmune disorders such as multiple sclerosis and Type 1 diabetes. (more…)

Our society is so gluten-filled that it can often be overwhelming to think about not eating gluten for the rest of your life. We are told to eat our multi-grain cereal for breakfast, our sandwich on wheat bread for lunch and fancy high-fiber grains with our dinner. Gluten Free Recipe: Cranberry Glazed Carrots

Cranberry Glazed Carrots

Ingredients:

2 lbs. fresh baby carrots (whole carrots, chopped into rounds, can be used as well) ½ cup jellied canned cranberry sauce (Ocean Spray is gluten-free) ¼ cup butter or margarine ¼ cup packed brown sugar 1 tablespoon lemon juice ½ teaspoon salt Place about 1” of water in a large saucepan; add carrots. Bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until tender. Drain in a colander and set aside. (more…)
