Gluten-free Recipe: Super Easy Breakfast Casserole

I love casseroles. They are quick, easy and versatile. They can be eaten for breakfast, lunch or dinner and offer an easy clean up.

EVOO (Extra virgin olive oil) for sautéing ½ bag frozen green beans (optional) ½ lb-1 lb ground turkey sausage 1 onion, minced 1 garlic clove, minced 12 eggs, beaten together 1 can black beans, drained 1 can diced tomatoes, drained 1 tablespoon chili powder 1 tablespoon cumin ½ tablespoon coriander Cheddar cheese for topping (optional) Salt and pepper, to taste


Preheat oven to 350 degrees Sauté onions and garlic in EVOO for approximately 3 minutes or until translucent Add in ground turkey sausage and brown Add in ½ bag of frozen green beans and mix through meat mixture to warm up (They will defrost and cook in oven) Add black beans, tomatoes and seasonings. Mix through. Grease casserole dish Place meat, vegetable mixture in casserole dish Pour beaten eggs over mixture Top with cheddar cheese Cook in a 350 degree oven for 1 hour
